This is a very good facsimile of the Planter’s Punch which is ubiquitous at Jamaica Inn. Of course it isn’t as good… because I wasn’t at Jamaica Inn when I drank it! But I’ll be there soon. And when I get there, one of these will be handed to me before I finish checking in. (Use Jamaican Appleton Estate Rum and St. Elizabeth Dram Liqueur.)
Ingredients
Planter's Punch
Directions
Make the syrup. In a small saucepan, add the sugar, water and pineapple juice. Let the sugar melt over low heat, stirring to dissolve. Let it cool and keep in the frig until needed.
Mix all ingredients except for the garnishes. Put some ice in a cocktail shaker and pour the drink mix over the ice. Shake, shake, shake! Strain into a tiki glass, add more ice, and garnish with a cherry and lime twist.
